Banana Waffles

1 cup all purpose flour
1 Tbs granulated sugar
1 tsp baking powder
1/4 tsp salt
2 large eggs
1 cup milk
4 Tbs unsalted butter, melted
2 bananas, thinly sliced
2 Tbs confetti sprinkles
maple syrup, for serving
spreadable butter, for serving
Directions
- Preheat waffle iron according to the manufacturer’s directions. In a large bowl, whisk the flour, sugar, baking powder and salt together.
- In another bowl, whisk the eggs. Add milk and melted butter to the eggs. Whisk to combine.
- Pour into flour mixture while whisking. Stir in the banana slices and sprinkles.
- Pour just enough batter into each waffle chamber to fill. Close the lid, and cook until golden and toasted.
- Serve warm with syrup and butter.
Note: To serve the next day, let the waffles cool completely. Wrap tightly, and refrigerate. Serve with cream cheese, cinnamon and honey, peanut butter and jelly, or hazelnut spread and jelly.
